4 Barbecue Party Recipes to Try This Fourth of July

1. Honey BBQ Chicken Skewers
Serves 6 to 8
These skewers are sweet, smoky, easy to serve, and much less messy than a full rack of ribs. Chicken thighs work especially well because they stay juicy on the grill and hold up well with a sticky BBQ glaze.
Ingredients
2 pounds boneless, skinless chicken thighs, cut into 1½-inch pieces
½ cup barbecue sauce, divided
2 tablespoons honey
1 tablespoon apple cider vinegar
1 tablespoon olive oil
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 red bell pepper, cut into chunks
1 red onion, cut into chunks
Metal skewers or wooden skewers soaked in water for at least 30 minutes
Directions
In a small bowl, mix the barbecue sauce, honey, and apple cider vinegar. Set aside about ¼ cup of the mixture for brushing on the skewers at the end.
Add the chicken to a large bowl with the remaining sauce mixture, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss until coated. Let it sit for at least 20 minutes, or refrigerate for up to 4 hours.
Thread the chicken, bell pepper, and red onion onto skewers.
Heat the grill to medium-high. Grill the skewers for about 10 to 12 minutes, turning every few minutes so they brown evenly.
During the final few minutes, brush the reserved BBQ glaze over the chicken. Remove when the chicken reaches 165°F in the thickest pieces.
Serve with extra barbecue sauce, sliced scallions, or grilled lemon wedges.
Party tip: Make these before guests arrive, then keep them warm on the cooler side of the grill until everyone is ready to eat.
2. Charred Street Corn Salad
Serves 6 to 8
This is the side dish that disappears first. It brings together smoky grilled corn, lime, creamy dressing, salty cheese, and just enough heat to balance out the barbecue.
Ingredients
6 ears fresh corn, husks and silk removed
1 tablespoon olive oil
⅓ cup mayonnaise
¼ cup sour cream
Juice of 2 limes
½ cup crumbled Cotija cheese or feta cheese
¼ cup chopped cilantro
1 small jalapeño, finely diced, optional
½ teaspoon chili powder
½ teaspoon garlic powder
Salt and black pepper, to taste
Extra lime wedges for serving
Directions
Brush the corn lightly with olive oil and season with salt and pepper.
Grill over medium-high heat for 8 to 10 minutes, turning often, until the kernels are tender and lightly charred.
Let the corn cool for a few minutes, then carefully slice the kernels off the cob.
In a large bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, and a pinch of salt.
Fold in the grilled corn, Cotija cheese, cilantro, and jalapeño if using.
Taste and add more lime, salt, or chili powder as needed. Serve warm or chilled.
Party tip: This can be made a few hours ahead. Add a little extra Cotija and cilantro right before serving so it looks fresh on the table.
3. BBQ Cheeseburger Sliders
Makes 12 sliders
Sliders are one of the best cookout foods because everyone can grab one without committing to a full burger. These have savory ground beef, barbecue sauce, cheddar, pickles, and soft buns baked together for easy serving.
Ingredients
1½ pounds ground beef
1 small yellow onion, finely diced
1 tablespoon Worcestershire sauce
½ cup barbecue sauce
1 teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
12 slider buns or Hawaiian rolls
8 slices cheddar cheese
Pickle chips, optional
2 tablespoons melted butter
1 teaspoon Dijon mustard
1 teaspoon sesame seeds, optional
Directions
Preheat the oven to 350°F.
Cook the onion in a large skillet over medium heat for about 3 to 4 minutes until softened.
Add the ground beef, Worcestershire sauce, garlic powder, salt, and pepper. Cook until browned and fully cooked, breaking the beef into small pieces as it cooks. Drain excess fat if needed.
Stir in the barbecue sauce and cook for another 2 minutes until the mixture is glossy and well combined.
Slice the slider buns in half horizontally, keeping them connected if possible. Place the bottom half in a baking dish.
Spread the beef mixture evenly over the buns. Add pickle chips, then layer on the cheddar cheese. Add the top buns.
Mix melted butter with Dijon mustard and brush over the tops. Sprinkle with sesame seeds if using.
Cover loosely with foil and bake for 10 minutes. Remove the foil and bake another 5 to 7 minutes, until the cheese is melted and the tops are lightly golden.
Slice and serve immediately.
Party tip: Put out extra pickles, sliced jalapeños, ketchup, mustard, and hot sauce so guests can customize their own slider.
4. Brown Sugar Grilled Peaches With Vanilla Ice Cream
Serves 6
No Fourth of July dessert feels more like summer than grilled fruit. The heat caramelizes the peaches, while vanilla ice cream melts into the warm juices for an easy dessert that feels much more special than it is.
Ingredients
3 ripe but firm peaches, halved and pitted
2 tablespoons melted butter
2 tablespoons brown sugar
1 tablespoon honey
½ teaspoon cinnamon
Pinch of salt
Vanilla ice cream
Chopped pecans, crushed graham crackers, or fresh mint for topping, optional
Directions
Heat the grill to medium-high and lightly oil the grates.
In a small bowl, mix the melted butter, brown sugar, honey, cinnamon, and salt.
Brush the cut sides of the peaches with the butter mixture.
Place the peaches cut-side down on the grill. Cook for 2 to 3 minutes, until grill marks form and the sugar begins to caramelize.
Flip the peaches and grill another 2 to 3 minutes, until tender but not falling apart.
Serve each peach half with a scoop of vanilla ice cream. Drizzle with any remaining butter mixture and finish with pecans, graham cracker crumbs, or fresh mint.
Party tip: Grill the peaches after the main food comes off. The grill will still be warm, and dessert will be ready in minutes.
A Simple Fourth of July Barbecue Menu
